Chef's Table

Instruction covers advanced culinary techniques and recipes. Participants work with Chef Terri to prepare a restaurant quality 3 course meal as they are introduced to advanced culinary techniques. Topics include: advanced knife skills, flavor development & sauces, time management, just to name a few.

Homemade Pasta

Learn how to make pasta the old fashioned way! Techniques will cover mixing and kneading the dough by hand. We will learn to make several types of pastas that will include fettuccine, pappardelle, and raviolis. While instruction will focus on pasta making, you will have a chance to sample several pasta dishes with a vodka cream sauce, roasted garlic marinara, & a basil butter sauce. I will also show you how to store the rest of the freshly made pasta so that you can enjoy it during future meals.
Make Pizza Like a Pro!

Learn the art of making pizza dough. We'll explore several gourmet pizza recipes starting with a Sicilian style pizza with a homemade basil marinara sauce and provolone cheese, followed by a Greek inspired recipe layered with feta, olives, tomatoes, spinach and sausage, and finishing with a non-traditional, but ever so delicious pizza made with a white bechamel sauce made from scratch and topped with walnut, blue cheese and figs.

Instruction covers basic recipes and culinary techniques to get you started. Topics will include: basic knife skills, proper food temperatures, and how to stock your pantry with the basics. Participants will prepare a simple 3 course menu as they learn about kitchen basics and then enjoy the meal at the end of the class.

Entertaining Made Easy

Take a sumptuous four course dinner and turn it into small bites for a classy cocktail party. All items are prepared ahead so that you can enjoy your party with minimal effort during the event: some items can be served chilled and others are reheated just before serving. The class ends with a family style meal made of all the dishes prepared:

A Taste of Normandy

Explore the rich gastronomy of France's region of Normandy which is known for its butter, cream, and cheese products, while learning some classic French cooking techniques. The class ends with typical French meal served family style.
